Brewing

Fermentis produces true brewers yeast in ready to pitch dry form in formats meeting the requirements of industrial brewers, craft and homebrewers. The yeasts are produced in dedicated, state-of-the-art propagation facilities and then carefully dried to preserve their characteristics.

  1. Homebrewing:

With advances in technology, the quality and range of brewing materials available to the home brewer has improved dramatically. To obtain the best results, it is necessary to use high quality yeast.

Fermentis has developed a range of high performing dry yeast to provide a reliable yeast source to the home brewer as used by the professional brewers of the world. Fermentis dry yeasts now offer a true alternative to liquid yeast cultures as the need for expensive shipping and packaging has been replaced by a nitrogen flushed sachet with a two year shelf life.

The dry yeast is easy to rehydrate as the wort is being prepared by the brewer. High yeast activity and correct yeast pitching levels will ensure that the fermentation starts rapidly and goes to completion in the desired time thereby reducing the risk of bacterial or wild yeast infection damaging the flavour or appearance of the beer. As the yeast is stable for up to two years, the brewer can always have a supply of yeast available to use as and when required.

As the craft brewing industry develops, the need to produce consistent high quality beers becomes even more important. The range of beer styles demanded by the market adds to the difficulty of yeast management, especially in the smaller brewery where the resources of both time and equipment are limited. Market demands for successful brands will require each batch to be flavour matched to previous brews.

To assist in this goal, Fermentis supply a range of true brewer’s yeast in a dry, ready to pitch form. The yeast are produced in dedicated, state of the art propagation facilities and then carefully dried to preserve their characteristics. True lager yeasts are available from recognized European sources enabling batch production of high quality lagers. A range of specialty ale yeasts have also been developed to produce ales with authentic flavor profiles.

All Fermentis dry yeasts offer long shelf life giving advantages in both distribution and storage. Rehydration is a simple procedure and correct yeast counts are achieved by pitching a known weight of yeast to the wort. No propagation or laboratory input is needed at this stage. As the yeast is monitored closely during manufacture, the microbial quality is assured.   1. Industrial Brewing

The industrial brewery market is continually seeking new methods of production with the overall objective of achieving cost savings and improved brewery efficiency. The cost of a poorly performing yeast strain is often significant both in terms of quality of the beers produced and the ease of processing beers. All beer blending operations have the side effect of reducing overall brewery performance.

A consistent yeast supply for brewing is a requirement and the opportunity to replace yeast propagation procedures with a ready to pitch dry yeast is now a viable option as both capital and the running expense of the propagation has to be fully assessed.

Ready to pitch yeast from Fermentis offer significant benefits to the brewery depending on the application. Multiple site operations can achieve consistency by using the same yeast for pitching at all sites without the cost of transport or multiple propagations. Beers brewed infrequently such as beer brewed under licence or new products are often better suited to direct pitching rather than running the propagation plant for yeast that is not required for more than a few brews.
